Tip for Making Lard

The fat that you make lard out of is called "leaf lard" and comes from the area around the kidneys of the pig.

There are many places to buy leaf lard. The first place I would ask is at a farmers market. Many farmers markets have websites so you can check before you go if there are pig farmers there and call to see if they can bring some to the market.

Secondly, and my favorite option, is to find a local farm and go pick it up directly. It is always worth the effort to see where and how your food is produced and plus kids just love visiting the animals.

Lastly, you can ask the butcher at your local grocer or independent butcher shop. This is a bit of a long shot and they will probably have to order it in, but it's worth a try.
